The Glycemic Index (GI) of a food is a measure of how quickly it will raise the blood glucose (blood sugar) level after it is eaten. Foods with a high GI score are digested quickly and release glucose into the blood quite rapidly. Foods with a low GI score are more slowly digested and release glucose more gradually into the bloodstream and over a longer period of time.
